Chocolate Cake

One of my favorite recipes to date, this one bowl Chocolate Cake is incredibly moist & very simple to make. Unlike a traditional Mud Cake or Devils Food Cake, this cake is very light & not overly sweet so it pairs perfectly with my Chocolate Frosting. This recipe may be the perfect one to try next time you're asked to bring a dessert to your next celebration. 

INGREDIENTS:

2 cups plain flour
2 cups sugar
3/4 cup cocoa powder
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon instant coffee powder/granules
1 cup milk 
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1 cup boiling water
Chocolate Frosting


METHOD:


Preheat oven to 180º C. Prepare two 9-inch cake tins by spraying with canola spray & lining with baking paper.
Add flour, sugar, cocoa, baking powder, baking soda, salt and coffee powder to a large bowl. Whisk through until combined well.
Add milk, vegetable oil, eggs, and vanilla to flour mixture and whisk together until well combined. Carefully add boiling water to the cake batter & continue to whisk together for 1-2 minutes.
Distribute cake batter evenly between the two prepared cake tins. Bake for 30-35 minutes, until a toothpick inserted in the centre of the chocolate cake comes out clean.
Remove from the oven and allow to cool for about 10 minutes, remove from the pan and cool completely.
Frost cake with Chocolate Frosting
